
Grate 1 zucchini and saute with about a third of a cup of frozen peas, s&p, and a splash of water or oil. Microplane a clove of garlic in, add 1/2 the juice of small lemon, about 1/4 cup tahini, and 1/4 tsp miso and mix it up. Serve on toasted sourdough with a dash of red pepper flakes. Next time when this isn’t a humble pantry meal I’ll add spinach, and maybe microgreens on top.
